Black Bean Salad
This recipe has so many good things going for it. It's fresh, it's incredibly easy, and it just also happens to be really good for you too!
This salad is pretty close to a staple in our house. Anytime I make it, Chris is asking for another batch in no time. It's a great side dish to bring to a cookout, or a tasty snack to have on hand at the house.
And talk about getting your daily dose of veggies and antioxidants! With summer just around the corner, it's perfect for anyone trying to get a little healthier before bikini season rolls around. Packed with red pepper, tomatoes, onion, and of course black beans, you can indulge in this delicious dish completely guilt-free.
The fresh taste of the cilantro and lemon juice is what really brings this salad together and make it so delicious. The longer you let the salad marinate after mixing (in the refrigerator), the better the flavor!
Try serving this salad on quinoa, bruschetta bread, with tortilla chips, or enjoy it all on it's own!
Directions:
1. Mix all ingredients in a large bowl.
2. Add salt and pepper to taste.
3. Best if refrigerated for at least an hour.
4. Enjoy!!
