Banana Bread Muffins
We always have bananas in our house. The problem is we tend to forget about them until they are too ripe to eat. This was driving me crazy because I hate being wasteful with food. It's expensive and not very good stewardship.
Solution: Make banana bread muffins! I never realized how incredibly simple banana bread really is. As long as you have some overly ripe bananas, you probably have all the other ingredients in your cupboard right now!
Directions:
1. Preheat oven to 375 degrees.
2. Mash Bananas and sugar in a large mixing bowl.
3. Add melted butter, salt, and baking soda. Mix well.
4. Add flour.
5. Pour batter into well greased muffin pan, or muffin baking cups.
6. Sprinkle brown sugar on top- the more the better!
7. Bake for 15 minutes or until tops are golden brown.
8. Enjoy!!
